Ci riporta indietro nel tempo, quando eravamo bambini la domenica ci si alzava presto e, con i nonni o le mamme, andavamo al porticciolo per prendere i pesci per fare la zuppa direttamente dalle barche.
Incocciavamo la semola nella mafaradda (un contenitore basso di terracotta smaltata) nel frattempo che la lasciava riposare nella maidda (la madia) metteva a cuocere la zuppa di pesce. Poi prendevamo la semola incocciata, la condivamo con tutti gli aromi e le spezie necessari, la mettevamo nella couscussiera  (una sorta di colapasta in terracotta) per poi metterla su una pentola con acqua e gli stessi aromi che usava per condire la semola. Impastavamo la farina con un po’ di acqua e sigillavamo la couscussiera  sulla pentola in modo che il vapore fuoriuscisse solo da sopra permettendo la cottura della semola, l’ impasto in più lo usava per fare i cuccureddi, dalla forma simile ai  taralli, che mettevamo sulla semola e quando risultavano cotti era il segnale che il couscous era pronto.

Il couscous deve cuocere almeno 90 minuti dal momento in cui il vapore inizia a fuoriuscire dalla couscussiera.

Nel frattempo colavamo il brodo e quando era ultimata la cottura del couscous lo bagnavamo con il brodo bollente e lo lasciavamo riposare almeno un ora nel lemmo (una bacinella di terracotta smaltata) con una coperta sopra per mantenere il calore.

Ancora oggi quando prepariamo il couscous nel nostro ristorante ci sembra di rivivere quei momenti, l’odore inconfondibile del mix di aromi che si utilizzano per condire la semola, la zuppa che sobbolle.
